GRAPE ORIGIN
The grapes for PRELUDIO DE SEI SOLO come from vineyards in the villages of La Horra, Gumiel, and Moradillo. All these plots – some our own, some long-term rented - are cultivated by us. Some of our vineyards are very old, 60 to 90 years old, while other are younger but trained in bush and with low yield (between 2.500 kg/ha to 4.000 kg/ha- equivalent to 17 Hl to 26 Hl per hectare) We always harvest by hand in small boxes and inspect thoroughly all clusters in two sorting tables.
WINEMAKING
Our grapes fermented in small open wooden vats of 2.500 litres and in one stainless steel vat of 8.000 litres. We do brief pumping-over and gentle pigeage in order to keep the freshness of the fruit and bring finesse and elegance to the final result, avoiding excessive power and structure.
After alcoholic fermentation with indigenous yeasts, our wines are racked to 2-year-old French barrels to undergo malolactic fermentation. This we do at very low temperature -at about 12 º C- taking several months to complete, and conferring our wines a special finesse and elegance.
After malolactic fermentation we rack our wines to 228, 300, 500 and 600 litre French oak barrels, of which only 20% are new. By doing this we achieve a fine integration of wood in our wines.
We gave our PRELUDIO DE SEI SOLO an ageing period in oak of 20 months
